What is NOVA and ultra-processed food?

NOVA is a food classification developed at the University of São Paulo. It groups foods by the extent and purpose of industrial processing, not by nutrients.

The four NOVA groups

  1. NOVA 1 — unprocessed or minimally processed (fruit, plain milk, eggs).
  2. NOVA 2 — processed culinary ingredients (oils, butter, sugar, salt).
  3. NOVA 3 — processed foods (canned vegetables, cheese, simple bread).
  4. NOVA 4 — ultra-processed products: industrial formulations, often with flavourings, emulsifiers or sweeteners.

Why it sits next to Nutri-Score

A product can have a good Nutri-Score and still be NOVA 4. The two measure different things, so we show both.
